Vineyards: viticultural region: Marche, province of Ancona.
Location: in the area of Verdicchio dei Castelli di Jesi and Rosso Conero.
Age: 8-35 years.
Soil: of alluvial marine sedimentary origin, with prevalence of clay and sand, and soils originating from calcareous marly rocks interspersed with areas of red-brown earth and clay. Presence of stone from the Plio-Pleistocene and Miocene.

Grape varieties and cultivation: grapes: 80% Verdicchio and 20% Montepulciano. Training system: upside down and double guyot. Planting density: 1.700-3.500 vines per hectare. Yield per hectare: 90 q of grapes.

Vinification: the Verdicchio is harvested by hand in the coolest hours of the day in small crates and left to cool in cold storage, with subsequent soft pressing of whole bunches; the must flower of Montepulciano is obtained by soft pressing of whole bunches previously cooled.
Vinification: fermentation at low temperature for several months. Bottling takes place in spring and the presa di spuma takes place very slowly. The wine remains in contact with its own yeasts for at least 36 months.

Pairings: Its elegant and soft structure and convincing sapidity suggest to grant it to important seafood dishes, both traditional and modern cuisine. It is also to be tried throughout the meal, in particular it is an excellent companion for dishes with shellfish, fish also in sauce, risottos with fish or vegetables.
