Vineyards: vine-growing region: Marche, province of Ascoli Piceno.
Location: town of Acquaviva Picena, in the DOC area of Falerio
Age: 6-30 years old.
Soil: alluvial marine sedimentary origin, with prevalence of clay and sand from Plio-Pleistocene and Miocene.

Grape varieties and cultivation: grapes: Pecorino. Training system: guyot, double guyot and double bow. Planting density: 1.700-3.500 vines per hectare. Yield per hectare: 120 q of grapes.

Vinification: harvesting by hand and by machine. Vinification: soft pressing, static decantation of the first-pressing must, fermentation at controlled temperature with selected yeasts followed by a short stop on the fermentation lees. Aging: the wine ages in bottle in thermo-conditioned storage.

Food pairings: excellent aperitif. A lover of seafood hors d’oeuvres and prosciutto and melon, it is delicious with fish dishes and fried fish. Perfect on boiled fish.

Serving temperature: 10/12° C.
